Negresco and spicy pasta or rice dishes: a wine that enhances strong flavors

Negresco is a deep red wine, made from a blend of selected grapes which expresses all the complexity and richness of the Valtènesi zone’s terroir. Characterized by notes of ripe red fruits and a delicate spiciness, it is particularly suited to being matched with pasta or rice dishes with spicy flavorings, or with mature cheeses. Its robust structure and persistent finish enhance the intense flavors of these dishes, creating a perfect balance.

Wine pairing with spicy pasta or rice dishes

Our Negresco finds its ideal harmony with primi piatti with highly spiced flavors. An excellent example is pasta all’Amatriciana, in which the sauce based on tomato, jowl bacon and chili pepper combines to perfection with the complexity of the wine. Its rounded body contrasts with the saltiness of the jowl bacon and the acidity of the tomato, while the spicy notes of the chili pepper are enhanced by the slight presence of spiciness in the Negresco.

Lasagna with meat sauce or pasta with sausage meat and mushrooms can also represent ideal pairings. The spicy sausage amalgamates perfectly with the tannins in the wine, while the mushrooms add an earthy element that harmonizes well with the structure of Negresco.

Another interesting accompniment is with pumpkin and speck (smoked ham) risotto. The sweetness of the pumpkin is set off by the saltiness of the speck and is balanced by the body and spicy sensations of the wine.

Wine pairing with mature cheeses

Negresco also makes an excellent accompaniment for mature cheeses which, due to their intensity, call for a wine that is up to the task. A mature Parmigiano Reggiano or a Pecorino find their ideal partner in Negresco. Mature cheeses tend to have a grainy texture and a strong, concentrated flavor, which goes well with the acidity and structure of this wine.

Blue cheeses like Gorgonzola piccante are also perfect for being accompanied by our Negresco: its spicy and fruity notes balance the intensity of the cheese, creating an explosion of flavors that satisfies the palate.
